Basundi – Creamy Milk Dessert Video Recipe

Basundi is a rich milk dessert flavored with nice aroma of cardamom, saffron and nutmeg.

 

 

Serves – 2 to 3
Preparation time – 5 mins
Cooking time – 15 mins
Ingredients :

  • Whole Milk – 3 1/2 Cups
  • Cashew nuts (chopped0 – 1 Tbsp
  • Almonds (Chopped) – 1 Tbsp
  • Nutmeg Powder – pinch
  • Sugar – 6 Tbsp or to taste
  • Cardamom Powder – 1/2 tsp
  • Saffron – few strands
  • Lemon juice – 2 tsp

Procedure :

Boil the milk for 7 mins in microwave (keep an eye, be careful don’t let it over boil). You can even boil on stove top.

Once the milk starts to boil remove from the microwave and add it into the thick bottomed wide non stick pan. Add in nuts, saffron.  Boil the milk for 15 mins on medium high flame stirring it continuously and scrapping off the sides. The milk should reduce to half .

Now add in cardamom powder, nutmeg powder and sugar and boil for 2 mins. Finally add lemon juice. and turn off the heat. Do not allow to thicken it further, it does thicken up once we remove from the heat and chill it in the refrigerator. Serve it chilled
