Masala Bhindi is Okra cooked in flavorful Indian spices that makes it taste heavenly.People think that cooking Okra is tough because of its stickiness but if you follow these steps and make this curry, you will start loving to cook the okra curries.
Preparation time – 5 mins
Cooking time – 15 mins
- Lady Fingers (wash, pat it dry then chop into 1inch pieces) – 2 1/2 cups
- Oil – 3 Tbsp
- Cumin Seeds – 1 tsp
- Onion (chopped) – 1/2 cup
- Sambar masala powder – 1 1/2 tsp
- Dry Mango Powder – 1 tsp
- Gram Flour (sifted chickpeas Flour) – 2 Tbsp
- Salt – tot aste
- Roasted Peanut Powder (coarsely made) – 1 Tbsp
- Coriander powder – 1 tsp
- Garam Masala Powder – 1/4 tsp
Get the okras ready, heat up the oil in a wide pan, when the oil is medium hot add in the cumin seeds, fry for 15 secs and then add in onion, immediately add okras and do not add salt. Cover to cook both the onion and okra simultaneously for 10 mins on low to medium, mixing it for every 2 mins. Make sure that you cook the okra and onion on open cover for 30 secs after every 2 mins and then later cook it covered.
Repeat this process of cooking the okras till they are cooked completely and evenly. After ten mins if they aren’t still done, cook it further for 2 more mins. Then spice up the curry with sambar masala powder, amchoor powder, gram flour, salt, peanut crush, coriander powder and garam masala powder and cook for 1 min on low to medium heat. Serve it with rice, roti, paratha.
