Puffed Rice Upma

Puffed Rice Upma is a traditional south Indian Breakfast recipe. Usually accompanied with any spice powder or pickle. In some parts of Andhra Pradesh this is popular as a street food usually served with Mirch Pakoras and pickle. This is simple yet delicious way to start your day.

Serves – 2 to 3
Soaking time – 1 hr.
Preparation time – 10 mins
Cooking time – 25 mins.
Ingredients :

  • Puffed Rice (thick variety) – 9 Cups (wash and drain and then soak in fresh water for 1/2 hr to 1 hr)
  • Cilantro (chopped) – 2 Tbsp
  • Onion (chopped) – 1 cup
  • Tomato (chopped) – 1 cup
  • Mustard Seeds – 1 tsp
  • Cumin Seeds – 1 tsp
  • Curry Leaves – few
  • Turmeric Powder – 1/2 tsp
  • Lemon Juice – 3 tsp or to taste
  • Salt – to taste
  • Oil – 3 Tbsp
  • Asafoetida (hing) – pinch
  • Ginger – small piece
  • Dry Red Chilli Whole – 2 no
  • Green Chillies – to taste
  • Coconut – 2 Tbsp

Procedure :

In a wide pan heat up the oil, season with mustard seeds, allow to pop then add in cumin seeeds, red chilli whole, hing and onion and cook till the onion is transparent.

While onion is getting doen prepare the masala paste, into a belnder jar add, green chillies, salt, ginger, coconut, cilantro, curry leaves and blend to a semi coarse paste.

Then add in the tomato to the cooked onion and cook till the tomato are soft. Meanwhile work with the soaked puffed rice. Start squeezing the water from the puffed rice and set it aside. Take care that you don’t end up in breaking the puffed rice. They should still retain their shape.

Add the puffed rice to the cooked onion  and tomato mixture and mix well. cover and cook on low to medium for ten mins mixing it once in a while so that everything gets heated up evenly without overcooking. Finally turnoff the heat and add lemon juice. mix well and serve with spicy podi or pickle of your choice.
