Paneer Tikka masala is a side dish that has smoky flavors of marinated paneer pieces floating in rich tomato base gravy and everybody will definitely love this dish. This is prepared in multiple steps, marinating the paneer and vegetables, frying them on tawa, cooking the gravy and cooking the roasted paneer and vegetables together with the gravy. So here comes the recipe..

Preparation time – 15 mins
Standing time – 1/2 hr to 1 hr
Cooking time – 30 mins
Paneer and Vegetable marinate :
- Greek Yogurt or any thick yogurt – 2 Tbsp
- Red Chilli Powder – to taste
- Salt – to taste
- Dried fenugreek leaves(Kassori Methi) – 1 Tbsp
- Paneer – 1 Cup
- Mango Powder – 1 Tbsp
- Tomato (remove the seeds and cut into cubes) – 1/2 no
- Onion (Cubed) – 1/4 cup
For frying vegetables :
- Oil – 2 tsp
- Paneer and vegetable marinate
- Oil – 2 Tbsp
- Cumin Seeds – 1 tsp
- Onion (chopped) – 1 cup
- Ginger paste – 1 tsp
- Garlic Paste – 1 tsp
- Tomatoes (Puree) – 1 cup
- Turmeric Powder – 1/2 tsp
- Coriander powder – 1 tsp
- Red Chillli Powder – to taste
- Salt – to taste
- Garam Masala Powder – 1/2 tsp
- Cream – 2 Tbsp
- Sugar – 1 tsp or to taste
- Cilantro (chopped) – 2 Tbsp
For preparing the marinade mixture into a mixing bowl add all the ingredients under :paneer an vegetable marinade: and mix everything very carefully taking care not to break up any paneer pieces or even hte vegetable pieces. Cling wrap this and refrigerate for 1/2 hr to 1 hr
After an hr, heat the skillet and add 2 tsp of oil and place the marinated paneer pieces and even the vegetables separately and fry till golden brown on both the sides.
Once done remove from the pan and set them aside.
Meanwhile let us prepare the gravy. Into a pan heat up the oil, add cumin seeds and allow to sizzle, add onion cook till soft and golden brown on color, add in ginger and garlic paste and cook till raw smell goes away.
Add in the tomato puree, and cook for 5 to 7 mins till the mixture become dry, add in enough water and red chili powder, cumin powder, turmeric powder, coriander powder, salt, sugar, garam masala and allow the mixture to come to a boil covered.
Add in the fried paneer and vegetable mixture and cook for 3mins covered finally top it off with cream and cilantro and serve hot with roti or paratha, nan or any Indian bread.
