Vegetable Pulav

Vegetable pulav or bagara rice is a very easy, healthy one pot dish which can be served as a complete meal by itself.The addition of veggies make it look vibrant and taste just awesome just by itself or any curry or raitha.This serves as a best way to get rid of all the left over veggies sitting in your refrigerator… :)

Serves – 2
Preparation time – 10 mins
Cooking time -30 mins
Ingredients:

  • Basmati Rice – 1 1/2 cups
  • Water – 2 1/4 cups
  • Carrots (Chopped)- heaped 1/3 cup
  • Beans (CHopped)- 1/3 cup
  • Potato (Chopped)- 1 medium
  • Cauliflower (Chopped) – 1 1/2 cups
  • Onion (Chopped or sliced) – 1/2 cup
  • Coriander – 1 /3 cup packed
  • Mint – 1/4 cup loosely packed
  • Green Chillies – 12 or to taste
  • Corn – 1/3 cup
  • Cloves – 3
  • Back Cardamom – 1
  • Black Cumin Seeds – 1 tsp
  • Cinnamon Stick – 1 inch
  • Black Peppercorns- 5
  • Bay Leaf – 2
  • Salt – to taste
  • Oil – 2 Tbsp
  • Ginger – 1 inch piece
  • Garlic – 4 cloves

Procedure:
Step 1: Wash, rinse and add fresh water and soak the rice for half an hour atleast.
Step 2 : In a wide pan , add oil, when its hot, add Bay leaf, peppersorns, black cumin seeds, cinnamon stick, black cardaom, cook for 30 secs till nice aroma starts to release.
Step 3 : Add in onions, cook till golden brown in color.
Step 4 : Add in chopped veggeis, cook till 50 % done.
Step 5 : Blend mint, green chillies, coriander, ginger, garlic till you get a coarse grind
Step 6 : Add this coarse mixture into the vegetables and cook for 2 min
Step 7 : Add the vegetable curry mixture into the rice and cook in a rice cooker.
Step 8 : When done serve hot with any curry or just raitha.
