Kathi Rolls/ Vegetarian Frankie Recipe

Kathi Rolls are popular street food in India. These rolls are so  versatile that they can be had as a snack or for lunch. Kathi Rolls are very filling and can be made with different stuffings. Here I made scrumptious panner and potato filling to make it more delicious.

 

 

 

 

Ingredients:

For the Dough:

  • Whole Wheat Flour – 1 Cup
  • All Purpose Flour – 1/2 cup
  • Salt – 1/4 tsp or to taste
  • Water – 3/4 cup or as required to make a soft dough
  • Butter – for shallow frying the frankies

For the Stuffing:

  • Paneer (Crumbled) – 1 Cup tightly ppacked
  • Potato (peeled, boiled mashed) – 1/2 cup
  • Cumin Powder – 1/2 tsp
  • Garam Masala Powder – 1/2 tsp
  • Chaat Masala Powder – 1/2 tsp
  • Bread Crumbs – 1/4 cup
  • Red Chilli Powder – 1/2 tsp or to taste
  • Ginger Garlic Paste – 1 tsp
  • Salt – to taste
  • Green chillies (finely chopped) – to taste
  • Coriander Leaves (fnely chopped) – 2 Tbsp
  • Oil – for shallow frying the patties

For Salad :

  • Bell Peppers (finely chopped) – 1 Cup
  • Onion (finely chopped) – 1/4 cup
  • Cilantro (finely chopped) – 2 Tbsp
  • Salt – to taste
  • Chaat Masala Powder – 1/4 tsp

For Green chutney:

  • Cilantro – 1/4 cup
  • Yogurt – 2 Tbsp
  • Salt – to taste
  • Ginger – small piece
  • Green chilli – to taste

Procedure:
Making the dough:
In a mixing bowl add whole wheat flour, maida, oil , salt and mix well till all the oil is mixed well with the flour.
Gradually add water to the dry flour mixture and make a smooth, soft but stiff dough (as we normally do for rotis)
Cover and rest aside until you prepare the stuffing, salad and green chutney.
For stuffing:
Mix in potato, paneer, cumin powder, chaat masala powder, red chilli powder, garam masala powder, green chillies, cilantro, bread crumbs, ginger garlic pastesalt until to get a smooth mixture (all the spices should be mixed well with the potato and the paneer.)
Shape them into three inch rolls.
Fry the rolls on a medium hot skillet till they are golden brown in color both the sides. (fry using some oil)
Set them aside. (Do not stack them)
For the Salad:
Fry the peppers and onion in the same pan for a min and put them aside.
Mix in the cilantro, chat masala powder, salt and mix well and keep that ready.
For green chutney:
Blend cilantro, yogurt, salt, ginger, green chilli to a smooth paste and keep it ready.
For making rotis:
Divide the dough into 8 portions and smoothen them.
Roll them into 5 inch diameter circles and fry them one by one till they are half cooked on both the sides.
Once all the eight rotis are done, set them ready.
Final assembling:
Place the roti on a working surface and place the roll, add some green chutney, add in a Tbsp of salad and roll them into a tight roll.
Using a toothpick seal them properly such that the stuffing doesn’t ooze out.
Once you make all the rolls pan fry them using some butter until both the sides turn golden brown.
Serve them with green chutney immedietely.

    Another thing where did u get gongura leaves for gongura puliogare. Also can u suggest some lunch dabba recipes which can be eaten cold too
